Endive is a leaf vegetable that belongs to the chicory genus.

There are two types of endive which are;

  • Curly Endive or frisee which is a narrow, green vegetable with curly outer leaves. Is is called chicory in the USA.
  • Escarole which is a broad-leaved endive that has broad, pale green leaves and is not as bitter as other vareties.

For this post, we are referring to curly endive.
